Nutritional Guide – Per Serve
Energy: 221 cal
4 unpeeled, washed potatoes (150g each)
1/4 cup low fat natural yogurt
30g low fat Danish fetta,crumbled
1/4cup breadcrumbs (30g)
1/4 cup reduced grated fat cheese (30g)
2tsp chopped fresh chives to serve (optional)
Salt and pepper
Step 1 Prick the potatoes with a fork and bake at 200C for one hour or until tender (or microwave on high for 15 minutes).
Step 2 Cut the tops off the potatoes and scoop out most of the flesh. Combine flesh with mushrooms, yoghurt, fetta, salt and pepper then spoon mixture back into potatoes.
Step 3 Combines breadcrumbs and cheese and sprinkle on the top of the potatoes. Bake at 200C for further 10 minutes or until top is crisp and lightly browned. Garnish with chives to serve, and add a fresh garden salad as a side.
